Missy's Baked Chicken and Potatoes

Ingredients 

Seasoned cut up fryer 
1 onion 
1/2 bell pepper
2 large potatoes 
1 cup of chicken broth (optional) 

Directions

Preheat oven to 375 degrees. Place chicken in large baking dish and bake uncovered for 25 minutes. While chicken is baking rinse and peel potatoes. Slice potatoes into 1 inch slices. Season potatoes with salt, black pepper, and red pepper. Take the baking dish out of the oven and turn each piece of chicken over on the other side (this allows chicken to brown on both sides). Place chicken back in the oven for 25 more minutes. Take dish out of oven and remove chicken from baking dish. Turn the heat on the oven to 350 degrees. Add potatoes and return uncovered dish back to the oven for 15 minutes. After 15 minutes add the chicken, chicken broth (or 1 cup of water if preferred), potatoes, onion, and bell pepper to the dish. Cover the dish with lid or aluminum foil and bake for 30 minutes. Serve over rice if preferred. ENJOY :)
