seasoned pork roast
3 large potatoes
2 cups of rice
1 onion
1 bell pepper (optional)
salt, red pepper, black pepper, garlic powder
Directions
Preheat oven to 375 degrees. Place roast in large pot and place in the oven uncovered. Bake for 30 minutes then take it out and turn it over. Place back in the oven and for 30 more minutes adding a half a cup of water if you notice it starting to burn. Some ovens heat differently so watch the meat closely to ensure it does not burn. After the 30 minutes take the meat out of pot and add the onions and bell pepper. Place pot back in the oven and cook for 15 minutes stirring onions and bell peppers every 7 minutes. When done take pot out and place roast back in the pot. Add 4 cups of water and seasonings and stir well removing anything that may be stuck at the bottom of pot. Reset oven to 350 degrees and place pot back in the oven. Cook for 1 hour uncovered stiring every 30 minutes. After one hour take pot out and cut up the roast into 1 inch sections. Add peeled and cubed potatoes and cover pot. Place back in the oven and continue cooking for 1-1 1/2 hours. Serve over rice and ENJOY :)
