Chicken and Sausage Gumbo

Ingredients 

1 cut up chicken seasoned with salt, red pepper & black pepper
1 1/2 cups of flour
1 1/2 cups of cooking oil
2 onions
pack of fresh smoked chaudice 
pack of Savoies smoked sausage 
pack of spicy Tasso 
green onion tops 

Directions 

Pre-heat oven for 350 degrees. Put seasoned chicken and cut up sausage in a large flat pan. Bake for 45-60 minutes. While that is baking heat grease on medium in the gumbo pot. Cook for about 30-45 minutes, stirring often to prevent burning. When roux looks like a medium brown add water till the pot is a little more than half full (1 1/2-2 gallons). Stir well and raise heat to bring to a boil. Add chicken and sausage to the pot and let it cook for about 2 hours. Remove any chicken skin that may float to the top. Add green onions about 20 minutes before it is cooked. Serve with rice and ENJOY!!
